How often do you find yourself using it.  It's kind of nice that light mortars (well, I guess up to 120mm) have this ability, however it's on the bombardment chart, and unless you have a mortar park (2 or 3 8-10s in adjacent hexes with a leader that can activate them all), the shots aren't that good.  There's no +1 for Op fire, and you would get the +1 for "I can see you", so that's kind of a wash.

I've only used it a couple of times, I'm just curious if others take advantage of it more.
I've taken a few mortar opportunity fire shots over many scenarios, usually against loaded trucks.
Not much. I always keep the morts back behind LOS so they don't get pounded after one shot by OBA.

But what about that sexy column shift for observing the target?

The dead don't get that shift.

Then again, it is Halloween...
Hey, I have 2 mortar platoons holding off a platoon of PZIVHs. Okay, not so much holding them off as "realizing that if they run they will be caught in the open and things will only get worse and hey, maybe we can roll a 2 or 12 on that assault roll."

My regular opponent uses it quite frequently but it is mainly because he likes the "surprise" effect...
